Banana, Pumpkin & Carrot Muffins Recipe

Start your week off right with this delicious, simple & low-fat muffin recipe!

 

Ingredients: 

1 box of carrot cake mix (like Duncan Hines)

¾ of a can of  100% Pure Pumpkin

1 ripened banana

Directions:

Pre-head oven to 350

Spray cupcake pan with non-stick spray

With a fork, mash banana in one large bowl until smooth, mix in ¾ can of pumpkin until smooth. Fold in 1 box of carrot cake mix until well combined.

Spoon evenly into 11 (for some reason I can never get the full 12) cupcake molds.

Bake for 45 – 50 mins, or until you can put a fork in the muffin and it comes out clean.
